And that doesn’t really give chef Fredrik Wallgren a small pantry to choose from. The farms in Skane and Osterlen are widely known for producing world-class vegetables and meats. The kitchen gathers inspiration from the Scandinavian heritage of food culture and brings it to life in contemporary interpretations. Something you will notice, whether you order lunch, a seven-course meal or decides to go straight for dessert.
The dinner serves reflect the seasons outside the window, and the kitchen of the Absolut Home restaurant is continuously experimenting with finding new ways to extend the season. One example is the flower from brussels sprouts. Earlier, it was discarded, but now we have discovered methods to use it. In this way, another classic spring primeur has been given a role well into the late fall. Finding replacements for plastic products is also something we are striving for. For example, we recently learned that reed can serve excellent as a straw in the drink.
